We enjoy our decaf everyday as an espresso creation or drip brew. So when we roast it, we do so with love and close attention to detail. The decaffeinating process takes a toll on coffee beans, so great care must be taken in order to roast the coffee to its full potential.
Our decaf is processed by Swiss Water who "create our Green Coffee Extract just once, made out of fresh water and all the soluble solids within coffee (minus the caffeine)... GCE is circulated around the green coffee until there is no more than 0.1% of caffeine remaining in the green coffee. Caffeine is removed from the GCE though a proprietary carbon filter system" resulting in a tasty coffee that is 99.9% caffeine free without exposing the coffee to chemical solvents.
We roast our decaf medium-light though it appears much darker as a result of the Swiss Water treatment. In the cup the coffee exhibits notes of caramel, milk chocolate, and subtle fruit.
